Peach Cobbler Waffles



Last week my daughter took me on a "date".  I love that we have a great relationship.  It means so much to me that we are friends as well and mother and daughter.  We had a great time and talked about all kinds of things.  Anyway, we went to Perkins for breakfast because she has wanted to try out their peach cobbler waffles all summer.  They looked so yummy that I had to sneak a couple of bites.  They did not disappoint!  While we were eating I thought that this was something that I could easily recreate at home for the family.  This was super simple to make and my whole family got to enjoy breakfast for dinner.



Peach Cobbler Waffles

Waffles (make up a batch of your favorite waffles)

Peach Cobbler : 3 cans of sliced peaches in heavy syrup
1 T cornstarch
Place peaches in sauce pan and heat on medium heat until hot.  Mix cornstarch with a little water and add to peaches.  Heat to a simmer and the syrup thickens slightly.  

Whipped cream: 1 C heavy whipping cream
3 T powered sugar
1/2 tsp vanilla
Pour cream into chilled mixing bowl.  Mix on high speed until light and fluffy, add powdered sugar and vanilla mix until well incorporated.

Streusel topping: 6 T melted butter
1 1/2 C flour
1/2 C brown sugar
1/4 tsp salt
2 tsp cinnamon
1/3 C oats.
Mix all streusel ingredients together with a fork until it resembles coarse crumbles.

Maple Syrup

To make waffles:  Place a waffle on a plate and top with about 1/2 C of peaches.  Add a spoonful of whipped cream and then sprinkle streusel on top.  I like a lot of streusel but feel free to add as much or as little as you like. 
Drizzle with maple syrup.

My whole family enjoyed these waffles.  While we wouldn't eat them on a regular basis they were super delicious. They tasted like you were eating peach cobbler.
